This is the recipe that I told you about in the previous post, for a great pre-work meal. You can either have this for a quick breakfest or a great snack!
Protein blueberry muffins
2 muffins per serving Nutrtional Info per muffin: Calories :50 Protein: 4 grams Carbohydrate: 7 gramsIngredients:
1 large container of Liquid egg whites
3/4 cup quinoa
1 cup of blueberries optional: apple chunks, strawberries, raspberries
Cinnamon
Stevia (optional)
Directions:
Spray the muffin pan with non-stick spray.
Fill each cup of the muffin pan with 1 TLBS. of quinoa, and 1TBLS. of blueberries, fill egg whites to the top of each muffin cup and add a sprinkle of stevia and cinnamon on top of each cup.
Bake at 350 for 20 minutes and you have breakfast or snack in no time.
