I used to buy my own bars but a year ago stopped because the ones I liked had soy in them. My body really doesn’t do well with soy, oats, gluten and dairy so trying to find a bar that doesn’t have a lot of sugar, fat and calories was tough. These protein bars turned out so comparable to the ones I used to buy–I had to give myself a pat on the back!
Serving Size: 4 bars
Ingredients
¾ cup almond flour
2 scoops vanilla protein powder
1/8 cup Stevia
¼ teaspoon salt (do not omit)
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon vanilla extract
3 teaspoon almond extract
½ cup unsweetened applesauce
2/3 cup egg white
4 ounces of water
Preparation
Preheat oven at 350 degrees.
Mix all ingredients together, until lumps are out.
Pour into a 9 X 9 baking dish.
Bake for 22 minutes, if you want the bars firmer leave them in till 25 minutes but watch them.
Take out and let cool.
Store in the fridge.
Optional: Add crushed almonds or spread almond butter on top.
