Okay, if you can’t tell, I’m a bit obsessed with the idea of pizza! I’m trying new ideas to make it a little less carb-y and more waist-friendly! Makes 6 servings–2 per person. Add in a fresh chopped salad to make a balanced meal!
Ingredients
1 lbs. extra lean ground turkey
1/4 cup egg whites
1 small onion, chopped
2 cups of chopped fined fresh spinach
2 tbs. of cilantro
1/2 cup of chopped up fresh mushrooms
1 tsp. of pepper
A dash of salt (I used No Salt Salt)
2/3 cup shredded cheese (low fat, fat free or Rice Cheese)
1/2 container of Organic Pizza Sauce
Preparation
Preheat oven at 400.
Mix the extra-lean ground turkey, chopped spinach, egg whites, cilantro, chopped mushrooms and chopped onions together.
Roll them into balls and lay them on a non-stick cooking pan.
Bake them for 40 minutes.
Spoon out the pizza sauce and sprinkle the cheese over each meatball and put back in the oven for 10 minute or until the cheese melts.
Sprinkle cilantro on the top and serve!
