Banana Almond Quinoa

Bored with oatmeal? Try this warm and yummy breakfast recipe for a change. Makes 4 servings.


1 cup dry quinoa
1 cup unsweetened Almond Milk or non-fat milk of your choice
1 cup distilled water
1 medium banana – the riper, the better
1 tsp. cinnamon
1 tsp. vanilla extract
1/4 cup almonds (I used raw almonds)
Honey to taste or Truvia/Stevia


Mash a ripe banana in the bottom of your pot.
Measure out your milk and water, and add to the pot. At this point, you can also add your vanilla and cinnamon. Bring to a soft boil and add your Quinoa. Cook, uncovered, until the water cooks out and you see translucent edges on the individual grains. Serve and top with Agave or Stevia and almonds.
For added protein add a scoop of protein powder!
