This is a request from a friend that wanted this recipe. After hearing how many people loved this recipe–I had to share! I love pizza but not all the calories so instead of crust I made it with sliced zucchini. These are really fast to make, so if you are in a hurry and want to make something quick for your guest–this is it!
Ingredients
4-5 medium to large size zucchini
1 can of organic pizza sauce
1 package of mozzarella or cheddar cheese (I use Rice brand, cheddar cheese)
1 package of organic gluten-free pepperoni or your choice of topping
Preparation
Preheat oven at 450.
Slice the zucchini in 1/2" slices
Spread them out on a non-stick baking sheet, make sure you have enough space in between.
Bake the zucchini at 450 for 15 minutes.
Take out the zucchini and layer on the pizza sauce first.
Then layer on the topping of choice (I used the organic pepperoni).
Sprinkle lightly on the low fat cheese on each bite size pizza.
Put the pizza's in for another 10-12 minutes for cooking, if using dairy cheese you will bake for less time.
Let cool for 5-10 minutes and serve!
