Cauliflower Riced Burrito Bowl

This fully loaded burrito bowl, is jam-packed with deliciousness! Give Chipotle your notice; you won’t be seeing them quite so often! Enjoy! Serves 4 people.


4 cups roughly chopped mixed cauliflower and brocolli or make it easy and steam 2 (12-ounce) package Green Giant® Riced Cauliflower & Broccoli
1/8 cup chopped cilantro
1 tbsp. lime juice
1 lbs. extra lean ground turkey (fully cooked) 
1 tbsp. taco seasoning mix (recipe: Taco Seasoning
2 cups fresh salsa 
1 1/2 cup canned black beans, drained and rinsed

Optional Toppings: 
2 tbsp. shredded reduced-fat Mexican blend cheese
1 tbsp. fat-free plain Greek yogurt
Extra fresh salsa for the top, for dairy free option!


1. Pulse cauliflower and broccoli in a blender until reduced to rice-sized pieces or steam both cauliflower and broccoli in the microwave or on the stove until cooked. Transfer to a medium bowl. Add cilantro and lime juice, and mix well.
2. Add cauliflower/broccoli  mixture, 1/2 taco seasoning mix, fresh salsa, and the cooked ground turkey together, and cook and stir until mostly softened and lightly browned, about 5 minutes. Transfer to a medium bowl, and cover to keep warm.
3. Remove skillet from heat; clean, if needed. Re-spray, and return to medium-high heat. Add onion and bell pepper, and sprinkle with remaining 1/2 tsp. taco seasoning. Cook and stir until softened and slightly blackened, about 4 minutes.
4. Add black beans and cook and stir until hot, about 1 minute. Transfer to the medium bowl with turkey, and broccoli/cauliflower mixture, and immediately top with optional cheese, and Greek yogurt.
