Cauliflower Spanish Rice

This taste like the real deal. I will only make this from now on–a ton of powerhouse nutrition with a explosive taste=amazing dish.


2 tablespoons of chicken broth
1 small head of cauliflower
1/2 medium chopped onion
1 can of (10 ounce)green chilies
1/2 cup diced tomatoes
1 teaspoon salt
2 teaspoons chili powder
1/2 teaspoon of ground pepper
2 cloves of garlic


Grate or process the head of cauliflower to the texture of rice (I pulse it in the food processor in two or three batches).
Chop the garlic, onions, peppers, and tomatoes.
Heat the chicken broth in a large saute pan.
Saute the vegetables together with the chilli powder until heated through.
When cauliflower starts to soften, add the rest of the spices and cook over low heat
until the texture of cooked rice.
Adjust seasonings to taste.
You may add cooked chicken or sausage to this to make a one-dish meal.
