I have been experimenting with salads and that’s how this wedge salad was created. I have never seen a wedge salad quite like this but it is one of my new favorites! Using my favorite toppings, crisp bacon, tomatoes, chicken, and avocado. It is sure to be a new hit in your home, enjoy! Serves 4.
Ingredients
Lettuce (I used a full head and cut in 1/4th)
1 large avocado
1 cup cherry tomatoes
1 medium cucumber
Handful of fresh cilantro
6 slices crispy turkey bacon
3.5 cups chopped (bite-size squares) cooked to your liking (or rotisserie) chicken breast (4-4oz.)
Dressing of choice (but not added into the nutritional info)
Preparation
1. Chop everything up into bite-sized squares. Throw it all in a bowl.
2. Measure out 2 cups and pour over 1/4th of a lettuce wedge.
3. Drizzle dressing over your salad, I used Walden Farms Italian Dressing.
