BOOM! This turned out great! My hubby’s birthday was this weekend and so I thought I better make something he would like. This is made out of chick peas, oats and UNREAL M & M’s. I thought for sure he would get grossed out with the chickpeas as the main ingredient but he was super surprised that it tasted as good as it did. I hope you enjoy as much as he did! Serves 10. Cut into 1/10.
Ingredients
2 cans (15 oz.) of garbanzos (drained and rinsed)
1 cup quick oats (or certified-gf quick oats)
1/4 cup unsweetened applesauce
3 tablespoon almond or coconut oil
2 tsp pure vanilla extract
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1/3 cup coconut sugar (I used Madhava ®-- You can sub to another sugar of choice)
1 cup UNREAL candy coated chocolates (2/4 for the recipes, 1/4 cup for the topping)
Non-stick spray
Preparation
Preheat oven at 350 degrees.
Blend everything (except the chips) very well in a good food processor (a blender might not blend well enough).
Mix in chocolate candies, and pour into the non-stick pan (I used a 10-inch glass pie plate, but you can use a smaller pan if you want a really deep-dish pie).
Cook at 350 degrees for around 35-40 minutes.
When it comes out of the oven, place (carefully) the 1/4 cup of the reserving candies on top.
Let stand at least 10-15 minutes before serving.
Enjoy!

Very tasty! My daughter didn’t even wait to let them cool. She enjoyed them warm as well. 🙂 It’s great to find treats that are not loaded with gluten and very little sugar. We’ll repeat this recipe.
