I make these for the week for my snack–packed with protein to leave me satisfied for a few hours! Makes 3 pancakes.
1/4 cup almond flour
1 scoop of vanilla protein powder
1/2 cup egg whites
1/8 cup Stevia (powder)
1/2 teaspoon of xanthan gum
1/2 teaspoon of baking soda
1/3 cup unsweetened almond milk (or milk of choice)
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
Tip: If too sticky add more almond milk.
Preheat oven at 350.
Blend all the pancake ingredients into a blender--mix until smooth texture.
Lay down parchment paper on a baking sheet, and pour out 3 scoops of the pancake mixture.
Bake for 20 minutes.
You may have extra pancake mix so repeat, so bake them right after.
They should come out thick and full in a golden brown, if not bake longer.
