Crunchy Broccoli Salad


I’m loving this salad–sweet, salty and crunchy! Perfect combo for any holiday party or gathering!

Ingredients

SALAD:
5 cups broccoli florets, cut into 1/2-inch pieces
2 cups cauliflower, cut into 1/2-inch pieces
1/2 cup chopped red onion
1 cup shredded chicken
1 cup cooked and crumbled (nitrate free) bacon pieces
1 cup sunflower kernels
1/2 cup raisins

DRESSING:
1 cup salad dressing or plain (low fat or fat free) greek yogurt
1/4 cup stevia
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Preparation

Combine all salad ingredients in a large mixing bowl; mix well.
Combine dressing ingredients in a small mixing bowl.
Mix until thoroughly combined using a fork or wire whisk.
Add dressing to salad and mix well.
Refrigerate 1 hour.
Enjoy!

Makes 8 to 10 servings.
