These were actually really good, to my surprise. I was actually going to make cauliflower rice but the cauliflower blended too much so it made it more mushy–but what do you do?? Surprise yourself and make something even better!
Ingredients
1 Full head of cauliflower
1/2 cup of shredded cheddar cheese (I used the Rice brand--dairy free)
3/4 cup egg whites
Preparation
Cut the cauliflower into pieces--add them to a blender and blend well.
It should still look a little lumpy.
Add them to a non-stick skillet and fry until almost a light brown (10-15 minutes).
Make sure to stir it so the cauliflower does not burn--every 30 seconds.
Add in the egg whites and stir around until the egg whites have cooked.
Finish, by adding in the cheese--allow it to melt.
Serve and Enjoy!
