The good part about this Instant Cinnamon Flax Meal Cereal, recipe is that you can make up a batch at the beginning of the week so you have instant breakfast every morning–just add water and coconut milk. You can also add berries or your favorite nut for toppings. You can store the leftover mix in an airtight container in the fridge. This recipe makes 4 serves, 1/2 cup dry mix.
Ingredients of dry mix:
½ cup + 2 Tbsp. chia seeds
1 cup vanilla protein powder
½ cup + 2 Tbsp. flaxseed meal
½ cup + 2 Tbsp. finely shredded unsweetened coconut
1 Tbsp. + ¾ tsp ground cinnamon
For one serving of prepared hot cearl:
2/3 cup unsweetened “warmed up” almond milk
1-2 packets Stevia
- Combine the chia seed, golden flax meal, unsweetened coconut, protein powder and cinnamon in an airtight container.
- Scoop out ½ cup of “oatmeal” in a serving bowl and keep the rest stored in the airtight container.
- Pour 2/3 cup warm (to hot) unsweetened almond milk over the “oatmeal” mixture and let sit for 3-5 minutes.
- Add stevia in the bowl and stir to combine.
