Lemon Pepper Cobb Salad

I’m trying to make more summer get-together party dishes for my clients and this one was super easy to make and great for a small to medium crowd. Enjoy!


1/2 a bag of broccoli coleslaw
1/2 a container of organic spinach
4  hard-boiled eggs
1 bunch of organic green onions
1 can of black olives
2-4 oz. chicken breast
1 cup grapes
1 lemon (half lemon for seasoning the chicken, other half for garnish)
1 teaspoon pepper (for chicken)
2 cups chopped broccoli


Bake the Chicken:

Season chicken with 1/2 lemon and ground pepper.
Bake chicken in the oven with a little water covering half of the two chicken breast.
Put tinfoil on top of the baking pan and bake at 350, for 1 hour.

While Chicken is baking:.
Chop the green onions, grapes in half, hard boiled eggs, and broccoli.

Once the chicken is done:
Cut the chicken in
 small pieces.
Get a plate that you want to serve this on, or you can use a bowl.

Then the layering of ingredients begin!
Start with the spinach on the bottom, then the broccoli slaw.

In a parallel line add the next ingredients in order.
2 Eggs
Black Olives
Green Onions
2 Eggs
Broccoli and lemon garnish the plate.
