Lemon Protein Cake

As usual, the cake is gluten free, without the use of refined sugar or artificial colors and flavors.  Your body will melt off into a puddle of goop onto the floor when you taste this, yes, it is that good! Yours knees will buckle, palms will sweat, heart rate will elevate –yes, you need to make this and share this with others. This recipe make 10 servings and it come with a great punch of protein and low in carbs…score! Enjoy this lovely, one! 


1 cup quick oats
2 scoops vanilla protein powder
1/4 tsp salt
1/2 tsp baking soda
the zest of one lemon
1 tbsp. chia seeds
1/3 cup freshly squeezed lemon juice
1 ¼ cup egg whites
1/2 cup baking stevia
1/2 cup applesauce


1. Preheat oven to 350.
2. Mix dry ingredients in a small bowl.
3. Mix remaining ingredients in a larger bowl and stir in dry ingredients.
4. The batter will be thin. Pour batter into a greased 8x8 pan and bake 23-25 minutes (done when a toothpick comes out clean from the center).
5. Cut into 10 squares.
