This was a quick dinner for our family one night this week. We already had boiled eggs, so this was a great alternative to hard boil boring eggs! This serves 12 per nutritional info.
Ingredients
12 hard-boiled eggs, peeled
1 1/2 cup black beans
2 tablespoons salsa
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
Topping: A light dusting of chili powder on top.
Preparation
Run a knife lengthwise along the peeled egg to separate the white into halves.
Discard the yolks and set the egg white halves on a large plate.
In a mixing bowl mash the black beans to get a creamy texture with a fork or you can also use a mini blender.
After the black beans are mash, add in the salsa, cumin, garlic powder and chili powder.
Mix well together.
Evenly distribute bean mixture among the egg white halves, about 1-2 tablespoons in each.
Sprinkle chili powder on top.
Serve and enjoy!
