I love these cookies because they are perfect for on-the-go, to and from the gym as a pre-or-post workout snack and a great way to get added protein. Plus, my kids love them! This recipe makes 24 cookies and serving size is 3.
1 cup egg whites
1 (14 oz.) can pumpkin (not pumpkin pie filling)
½ cup stevia (granules)
1 cup gluten-free quick oats
4 scoops vanilla protein powder of your choice (I use one with low carbs and low sugar)
2 tsp. cinnamon
1/2 tsp. pumpkin pie spice to taste
2 tsp. vanilla extract
2 tsp. baking powder
Preheat oven to 350. Spray baking pan with nonstick cooking spray, or use parchment paper.
Mix all ingredients together in a large bowl.
Scoop 2 tbsp. for each cookie, and flatten out.
Bake 15 minutes, until golden brown.
Remove from pan onto a cooking rack to cool.
