It was my friend and clients birthday this week, so before her workout session I made her a cake. Yes, it looks bad that I make a cake for a person is who is coming to me for a workout. But it was her birthday and it was a fairly healthy cake. Do not use any other flour, coconut does not work…otherwise it will be on the dry side. I hope you enjoy!
Ingredients
2/3 cup almond flour
1/2 cup raw cacao powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
½ cup egg whites
¼ cup coconut oil
3/4 cup stevia or pure maple syrup
1/2 cup unsweetened almond milk
1 tablespoon vanilla extract
Optional: Enjoy Mini-Chocolate Chips
Non-stick spray
Preparation
Preheat oven to 350 degrees.
Grease cake pans with either coconut oil or non-stick spray.
Combine coconut flour, cacao, baking soda and salt in a small bowl and set aside.
In the bowl, whisk the eggs.
Add the oil, maple syrup, unsweetened almond milk, and vanilla extract and continue to mix until combined.
Add the dry ingredients into the wet ingredients.
Mix on low speed until the dry ingredients are incorporated – about 30 seconds. Scrape down sides of mixing bowl (you may need to do this a couple of times) and beat cake batter on high speed for about one full minute so that the batter is fluffy.
Divide batter between the two prepared small pans. It will be thick. (Spread it out evenly in the pan). Or you can use just one 8X8 pan.
Bake for 35-40 minutes.
Let cool for 5 minutes and add topping of choice (Enjoy Mini-Chocolate Chips).
Makes: 2-Mini-Pans or 1-8x8.
