I have been craving something minty, cool and tasty for the past week since the weather is hot in Minnesota and all. Just kidding, that’s my humor for this windy, cold and not May weather we are having. But I made this recipe in hopes that this cool and refreshing treat will hopefully bring in some HOT and SWEATY summer weather.
Ingredients
1 Scoop chocolate protein-(that is what I used, make sure you are using a low sugar protein powder)
6-8 unsweetened almond/coconut milk ice cubes (this is what makes it thick)
1 cup unsweetened chocolate almond/coconut milk
2 packets of Stevia
1/8 teaspoon of pure organic (if you choose) peppermint extract
1/2 teaspoon of xanthan gum
optional: pecans as a topping!
Preparation
First, fill an ice tray with an unsweetened milk (I used chocolate unsweetened almond milk), put in in the freezer and let it freeze for a couple hours.
Add protein powder, ice cubes, unsweetened chocolate almond/coconut milk, Stevia, peppermint extract, and xanthan gum(to thicken the ice cream).
Blend well, you may need to stir it around to break up the ice cubes.
Pour in a bowl, eat immediately-or freeze it for 20 minutes for a more ice cream texture.
Add, your toppings or enjoy as is!
