I never tried this before making these because I was unsure about wanting to eat the whole green pepper. But to my surprise, the whole stuffed pepper was like having a party in my mouth.
Ingredients
1 green pepper (add for as many as you serve)
1 turkey burger (I use Jenni-O Extra Lean Ground Turkey)
1/4 cup gluten-free pizza sauce
1 Tbs. cheddar cheese
1/2 cup diced cauliflower
1 Tbs. black olives
Preparation
Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle pepper inside, and set aside.
Cut the Cauliflower up in fine pieces--like rice would look.
In a large skillet, saute cauliflower and black olives for 5 minutes, in a little oil. At that time, either make a turkey burger (I used the Gorge Foreman) or brown ground turkey. Drain off excess fat, and season with salt and pepper. Remove from heat. Make sure to chop up the turkey patty in little chunks.
Stir in another bowl the turkey, cauliflower rice, black olives and gluten-free pizza sauce.
Scoop the mixture into the green pepper and add cheddar cheese to the top.
Bake on a non-stick pan for 5 minutes or until the cheese melts.
This is a perfect meal for a party, super cute and your guest will love it!

Cauliflower is a new favorite and these turned out great. Next time I will try and add some garlic or onion to the ground turkey. My husband wants to try red peppers too. Needless to say, this will be in our dinner rotation! Thank you!
