I made this mug cake this morning after my morning run, and this turned out AMAZING! I hope you enjoy as well!
1/3 cup shredded carrots
3/4 scoop vanilla protein powder
2 teaspoons applesauce unsweetened
1/2 cup egg whites
1 tablespoon unsweetened almond milk
1/2 teaspoon xanthan gum
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
Shred the carrots until fine in texture in a chopper.
Mix all ingredients altogether until a smooth texture.
Pour into a nonstick mug (I used coconut spray).
Microwave for 2-3 minutes or until it forms a cake.
