This protein and veggie pack recipe is dedicated to all the 6-week challengers that I’m working with, they are doing so awesome and all together as a group (not even getting all the numbers) we are around 250 lbs. lost in 2 weeks. So staying on track around the greatest game days, is key!
Make as much or as little as you want, make sure you get a plate with these babies because you will want more than just one. Enjoy!
Ingredients
4 large collard green leaves, stems shaved
8 ounces shaved turkey (your favorite homemade or deli variety)
8 ounces shaved beef (your favorite homemade or deli variety)
1 container of red pepper hummus (or your favorite)
Add-ons:
Dill pickles
Bell peppers
Red onions
Preparation
For each wrap, spoon 1/4th of the hummus onto the backside (stem side) of a collard leaf. Top with 1/4th of the meat plus any bonus add-on's. Roll the wrap so that the stem spans the length of the whole roll.
Using a sharp knife, cut the wrap into 1-inch thick pieces.
Chill until serving and then enjoy!
