I’ll admit I’m a sucker for fall flavors. Anything pumpkin, cinnamon, or apple flavored automatically grabs my attention. But pumpkin is my ultimate favorite! I’ve made pumpkin muffins, pumpkin pie, pumpkin protein bars, pumpkin protein cookies…I think you get the idea. This recipe makes 14 balls. The serving size is: 4 pumpkin protein balls.
Ingredients
1/2 cup pumpkin puree (not pumpkin pie mix)
1/3 cup unsweetened almond milk
1/8 cup stevia
2 scoops vanilla protein powder (I use Life Basic's Pea Protein, it is a thicker consistency for baking)
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin spice
1/2 ripped banana (mashed)
1/2 teaspoon vanilla extract
Preparation
1. Blend all wet and dry ingredients together, make sure to stir in the unsweetened milk slowly until the right consistency. Since my protein powder is thicker, I do use more. So that being said mix 1 tablespoon at a time to get the right thickness.
2. Roll dough into small balls, about 2 tablespoons.
3. Put into the freezer for 30 minutes, and eat or store in a container with a lid in the freezer for 1 week.
When you are ready to eat them, take them out of the freezer if left longer in the freezer for 10-15 minutes until soften enough to eat.
This is a great snack or breakfast!
