Finally finding some alternatives to oatmeal. Since being allergic to oatmeal, I miss the warm cereal on cold days. I tried making my own overnight pumpkin “hot” cereal with chia seeds. So good! It tasted like the real deal! So easy too–I left it over night in the fridge done in the morning, warm on the stove for 5 minutes and done! Quick meal for a busy morning! Makes 1 serving.
Ingredients
1/2 can (15 oz) organic pumpkin puree
1 cup unsweetened almond milk
2-3 Tbsp Stevia (I use NuStevia Brand)
1 tsp vanilla extract
2 tsp pumpkin pie spice blend
1 scoop vanilla protein powder
1/4 cup chia seeds
Preparation
In a medium bowl, whisk together everything except the chia seeds.
Pour into any glass container with a lid.
Add the chia seeds and stir well to combine.
Chill for at least 2 hours or overnight.
When ready to eat, warm on the stove for 5-10 minutes.
Top with walnut or nuts of your choice.
