Can you tell already I love pumpkin?? Who doesn’t! This is great for homemade protein bar, if you love pumpkin pie you will love this recipe! Makes 12 bars. Serving Size is 4.
Ingredients
Pumpkin Bar:
3/4 cup organic pumpkin puree
1/4 cup Unsweetened Almond Milk or milk of choice
3/4 cup egg whites
1/2 cup of Stevia or 10 packets of Truvia
2 scoops of protein powder (I use Life Basics Vanilla Protein)
1/2 cup almond flour (or flour of choice)
1/4 teaspoon of clove
1 teaspoon of nutmeg
2 teaspoon of cinnamon
1 teaspoon of all-spice
1 teaspoon of baking soda
1 teaspoon of baking powder
Optional toppings: Walnuts and sprinkle cinnamon or protein frosting.
Protein Frosting:
1 scoop vanilla protein
1 tablespoon organic pumpkin puree
2 packets of Truvia or 1 teaspoon Stevia
1/2 teaspoon cinnamon
2/3 cup unsweetened almond milk
Preparation
Preheat oven at 350 degrees.
Mix all wet ingredients together and dry together and pour the mixtures together in a blender. Blend well enough to get a creamy mixture.
Pour the mixture in a 12 1/4in. X 8 1/4 in. pan.
Sprinkle cinnamon and optional walnuts on the top.
Bake for 35-40 (use a tooth pick to check if it comes out clean) at 350.
Cool completely in the fridge for a couple hours and Enjoy!
Optional Frosting instructions:
Mix all ingredients well and add to the top of the bars after being cooled for a couple hours.
Note: These need to be cooled and they will be a little soft.
