Root Beer Float Protein Ice Cream

Yes, summer is upon us. I’m excited to make and share more summer weather recipes to keep us cool for the summer!


1 scoop vanilla protein powder
6-8 unsweetened almond/coconut milk ice cubes (this is what makes it thick)
1 cup unsweetened vanilla almond/coconut milk
2-3 packets of Stevia
1/2 teaspoon of pure organic vanilla extract
1 teaspoon of pure root beer extract
1/2 teaspoon of xanthan gum


First, fill an ice tray with an unsweetened milk (I used vanilla unsweetened almond milk), put in in the freezer and let it freeze for a couple hours.
Add protein powder, ice cubes, unsweetened vanilla almond/coconut milk, Stevia, root beer and vanilla extracts, and xanthan gum(to thicken the ice cream).
Blend well, you may need to stir it around to break up the ice cubes.
Pour in a bowl, eat immediately-or freeze it for 20 minutes for a more ice cream texture.
