I make this ALL the time. It is a great mixture of greens in one salad.
Ingredients
1 lbs. extra lean ground turkey
1 cup cooked kidney beans
1 bunch of asparagus
2 cups brussels sprouts
4 cups spinach
1 teaspoon cumin
1/2 ground pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/2 onion powder
1/2 chili powder
1/4 cup water
1/4 cup mozzarella shredded cheese (I used almond cheese)
1/2 teaspoon of olive oil
Preparation
Preheat oven at 400 degrees.
Cut asparagus and brussels sprouts into small pieces.
Put asparagus and brussels sprouts in a Ziploc biggie with 1/2 teaspoon olive oil and shake until the veggies are all covered.
Bake asparagus and brussels sprouts in the oven at 400 for 20 minutes
Meanwhile when the veggies are baking:
Brown ground turkey meat until done.
Add in all the seasonings with 1/4 cup water.
Add 1 cup spinach and kidney beans to the turkey mixture.
Once asparagus and brussels sprouts are done add them into the the turkey bean mixture.
Put spinach leaves on your serving plates.
Scope out the ground turkey bean mixture and add it on top of your spinach leaves.
Top with a little mozzarella cheese.
