These pancakes are so light and fluffy, it’s really incredible. I served mine simply with some fresh blueberries and a good drizzle of maple syrup. These babies are everything I had could hope for and I think YOU will simply enjoy these, too! This recipe serves 1.
1 scoop vanilla protein powder
2 Tbsp. coconut flour
1 Tbsp. almond flour
1/4 cup egg whites
1 tsp. pure vanilla extract
1 tsp. baking powder
1 tbsp. psyllium husks
Heat a non-stick frying pan on medium.
Mix all ingredients together in a bowl.
Pour ingredients into pan to form pancakes, cook until bubbles appear then flip, remove once cooked to desired texture.
Dayna’s Tip: Add a 2 Tbsp. plain Greek yogurt, 1 Tbsp. PB2 + 3 tsp. unsweetened milk (mix), or ¼ cup berries of choice!
