Vanilla Pumpkin Zucchini Protein Muffins


I have so much zucchini I had to make some muffins, with Fall around the corner why not add some pumpkin puree? Makes 12 muffins–Serving Size: 1

Ingredients

1 whole egg
2 egg whites
3/4 cup of vanilla protein powder
1/8 cup of almond flour
1/2 cup of pumpkin puree
1/2 teaspoon cinnamon
1 tbsp of vanilla Stevia drops or 1/8 cup Stevia
1 1/2 cups of grated zucchini (I use 2 medium size zucchini)

Preparation

Preheat oven at 335 degrees.
Chop zucchini in a blender or by hand into small pieces (just make sure not to chop too much so they become liquid).
Mix all wet and dry ingredients together.
Baked in a non-stick sprayed 12 muffin pan or use silicon cupcake liners for about 35 minutes.
Let cool and Enjoy!
