Sometimes I come up with recipes when I have left over meals in my fridge and have no idea what it may taste like but this recipe turned out to be a favorite of mine. It is also nice to be creative with the leftovers because you never know what the recipe could taste like. I was pleasantly surprise with this one! This recipe make 4 servings.
Ingredients
4-4oz. chicken breast, chopped
3/4 cup kale, finely chopped
1/4 cup parsley, finely chopped
½ cup chopped walnuts
1 stalk celery, chopped
1/4 cup red onion, finely chopped
1 cup apples, sliced
¼ cup avocado (dairy free) or greek yogurt
2 tsp. stevia
2 tsp. fresh lemon juice
Pinch ground pepper
8 romaine leaves
Preparation
1. In a large bowl, combine the chicken with the kale, parsley, walnuts, celery, onions and apples. Season with a pinch of salt and pepper and give it all a good toss.
2. In a smaller bowl, combine avocado or greek yogurt, lemon juice, honey and another pinch of salt and pepper. Whisk to combine. Drizzle dressing over chicken salad and toss to combine.
3. Serve scoops of the salad in the wide end of romaine leaves.
Serve immediately and enjoy!
