White Chicken Chili

This is great for a cold winter night, my client and friend Vickie has been telling me how great this recipe is! So I thought she could not help but share this yummy recipe!


1 can low-sodium chicken broth
1 lbs. of boneless chicken breast
1 white onion chopped
3 cloves of minced garlic
1 can of rotel tomatoes with chilies (not drained)
1 can of green chilies
2 cans of great northern beans

Chili seasoning:
1/2 Tsp. of oregano
1/2 Tsp. of ground coriander
1/2 Tsp. of Cumin
1/4 Tsp. of black pepper
1 Tbls. of lime juice


Poach chicken breast in broth and shred.
Add chicken broth with other ingredients to crock pot and cook all day (6-8 hours)
Serve with cilantro, and a little low-fat sour cream!
If you want to freeze for later, just double the recipe. Enjoy!
