Okay, so I was so excited about making these all day yesterday! My husband and I wanted to use our leftovers from Sunday night, and I thought this was the best idea for the pizza toppings. We used extra lean ground turkey,onions, 1 tomato, 2 green peppers, mushrooms, and green onions, and of course the Zucchini! It was simple to make and tasted fantastic. Both my husband and I loved it! I know what I’ll be making next time with our leftovers!!
When I say large this is the LARGE zucchini I used!
Ingredients:
1lb. extra lean ground turkey meat
1 sweet onion
1 large tomato
1 small pack of portabella mushrooms
1/2 cup of cut up green onions
2 green peppers
1 large zucchini
Non-stick spray
1 can of pizza sauce (I used Muir Glenn Organic Pizza Sauce)
Directions:
While browning up the extra lean ground turkey,chop all the veggies up in little pieces. Once the ground turkey is browned, add all the veggies and cook veggie until they are soft. Set aside the turkey and veggie mix and prepare the Zucchini. You will want to cut the zucchini in thin slices and put them on a pan with non-stick spray. Bake them for 20 minutes, take out and spread the pizza sauce and add ground turkey and veggie mix on top. Broil on high for 3-5 minute and you get a crispy healthy mini pizza!
