I got this little recipe idea from a friend/client this weekend and it sounded amazing so I came up with this. It is not the most beautiful chili but it totally makes up for the flavor! This is a great meal for those cold fall nights. Serves: 6 and the serving size is 1 1/2 cups.
Ingredients
1 pound extra lean ground turkey breast
1 yellow onion, chopped
2 garlic cloves, chopped
1 cup fresh kale
1 cup spinach
4 tomatillos, chopped
¼ cup green onions
¼ cup green chilies
2 green peppers
2 cups vegetable/chicken broth, low sodium
2 cups water
1 ½ cups white navy beans, cooked
1-1/2 tablespoons cumin
½ tablespoon dried oregano
1-1/2 tablespoon sea salt
½ teaspoon white pepper
2/3 cup fresh cilantro, chopped
Preparation
1. Brown the ground turkey with the onion and garlic cloves over medium heat until it is cooked thru.
2. Place the cooked ground turkey and garlic, onion mix along with all the other ingredients, including the chopped veggies, beans, broth, water and seasonings in a crockpot.
3. Cook on low for 6-8 hours.
