This was a request from one of my Determinite followers on my Facebook page. I forgot about lemon bars until she brought it up. So I made these as healthy as I could. You can use the real deal with this recipe (butter for the crust, I used 2 cups of unsweetened applesauce), and you can use real sugar (I used Stevia).
Ingredients
For the Crust:
1/2 cup of almond flour (you can use flour of choice, I like almond because it is higher in protein)
2 scoop of Vanilla Protein Powder
10 packets (1/8 cup) of Stevia
1 cup of unsweetened applesauce (using applesauce the crust is a little light, but still taste great)
2 tbs chia seeds
Lemon Filling:
1/2 cup of Fresh Lemon juice (3 juiced lemons)
5 packets (1 tbs) of Stevia (You can use regular sugar, you would need 1/2 cup)
1/2 teaspoon of vanilla extract
2 tsp. of lemon zest
1/2 egg whites
1 egg
Powder Sugar Recipe:
You can use real powder sugar or use 1 cup of granulated Stevia (not the packets)
1 tsp. of cornstarch
Mix in a food processor on high for 1 minute, and now you have sugar free powder sugar!
Preparation
Preheat oven at 350.
To make crust , mix in flour, chia seeds and sugar, using a food processor or a blender to fully mix. Than add the 2 cups of applesauce and blend on high again till mixture is creamy.
Pour crust mixture on a 9 X 9 non-stick spray pan, make sure to press the crust down evenly.
Place the crust in the oven for 20 minutes at 350.
While crust is baking, make the lemon filling. Beat the 3 egg whites and 1 full egg in a blender (I used my ninja) until well blended.
Add vanilla and Stevia, Mix well.
Add lemon juice and lemon zest blend again until it is a creamy color.
As soon as the crust is finished, remove from oven and reduce temperature to 300.
Immediately pour in the lemon mixture on the crust.
Bake completely, 30 minutes, cool and cut into 24 bars.
