I was in need of something other than egg whites or a full egg for my mid-afternoon snack so my daughter and I decided to bake some cupcakes. Protein cupcakes to be exact! They sound dangerous but they are actually pretty low in carbohydrates and sugar.
I’m loving the fact that anytime I start making anything in the kitchen, my little one has to sit on the counter (she is almost 2) and help cook. Can I say “HALLA” I think she will be able to make her own food by the time she is 3. YES!! Well, except for the stove stuff!
These little cupcakes are so great, because they hit the spot for chocolate craving and keep you satisfied for awhile with the protein.
Protein Chocolate Mint Cupcakes
Serving size: 2
calories are 85, 1 gram of fat, 3 carbohydrates, 1.5 grams of sugar and 16 grams of protein.
Ingredients:
2 Scoops of Protein Powder (I used Life Time’s Basic Pea Protein-Chocolate)
2 Cup egg Whites
1/8 Cup Raw Cocoa Powder
1 teaspoon pure vanilla extract
1/4 teaspoon of pure mint extract
3/4 cup Truvia
1/2 teaspoon of Xanthan gum
1/2 teaspoon of baking power
Directions:
Preheat the oven at 350.
Mix all dry ingredients together and wet ingredients separately.
Blend the wet and dry ingredients together and mix well till smooth.
Pour the mixture into non-stick muffin pan or I used the parchment large baking cups.
Bake in the oven for 20 minutes at 350 degrees.
Eat them warm or warm them when you want a yummy chocolate treat.
