Whether it’s movie night, or snack time, popcorn is always delicious! The best part of this snack choice is that it is easy to make, store for another time and also has a mixture of a fast carb and protein! Score! Be creative with this recipe, if you want to change the spices or flavor of protein DO IT! Serving size is 3 cups for a snack (depending on how much you use for the spray).
Ingredients
Popcorn
1. 5-6 cups air popped organic popcorn (or using the paper bag method/stove top).
Cinnamon bun mix
1. 1/2 tsp. cinnamon
2. Pinch sea salt
3. 1/2 scoop vanilla protein powder (optional)*
4. 2 Tbsp. 0r 2 packets of Stevia Sweetener
5. Coconut oil cooking spray (I use a non-propellant spray, so it only has coconut oil).
Preparation
1. In a small mixing bowl, combine the cinnamon, sea salt, protein powder (if using it), Stevia sweetener and mix well.
2. Pour your popcorn in a large bowl or extra-large paper bag (bag works best). Spray with the cooking oil spray to cover the popcorn.
3. Pour the cinnamon bun mix over it and shake well until combined- If it isn't sticking well, add a dash more cooking spray.
4. Enjoy!
Dayna's Tips:
1. * I recommend using a blended protein powder or vegan protein powder
2. ** Adjust to taste on the sweetener. My protein powder was sweetened so I kept it at 2 tablespoons.
How to make popcorn with the paper bag method:
1. Put your uncooked popcorn kernels into a paper bag and fold the top over loosely.
2. Place the bag upright (so it’s standing up with the fold at the top) into the microwave.
3. Cook until there are about 3 seconds between pops – this took me 1 min 40 seconds in a 1000 watt microwave.
That is it, enjoy!
