I was super excited that these turned out! Oh and these are fabulous for breakfast, snack or dessert! Serves 8 people–1 per person.
Ingredients
Pancake:
1/2 cup almond flour
2 1/2 scoop of vanilla protein powder
2 cup egg whites
1/8 cup Stevia (powder)
1 teaspoon of xanthan gum
1/3 cup unsweetened almond milk (or milk of choice)
Banana Frosting:
1/4 cup Stevia (powder)
2 bananas
1/2 scoop vanilla protein powder
1/2 cup unsweetened almond milk
1/2 teaspoon of xanthan gum
1/2 teaspoon of vanilla extract
Topping-optional--chopped:
Blueberries
Strawberries
pineapple
Banana
Nuts
Preparation
Preheat oven at 350.
Blend all the pancake ingredients into a blender--mix until smooth texture.
Lay down parchment paper on a baking sheet, and pour out 5-6 scoops of the pancake mixture.
Bake for 20 minutes.
You may have extra pancake mix so repeat, so bake them right after.
They should come out thick and full in a golden brown, if not bake longer.
Meanwhile when your pancakes are baking--start on the frosting:
I used my Ninja Blender again and mix all frosting ingredients together.
Mix until creamy and pour into a container and set aside till the pancakes are finished.
When the pancakes are finished, spread the frosting on top and add toppings of your choice if you choose and ENJOY!
