Yes, that’s right I made up another word. That is how I roll, but I wanted to share with you what my family ate tonight and it was a cross between a taco dip and a dinner entree. So I made the Dip’ner my new word for the day. Okay, I think you got it. So here I go, and FYI made this in 15 minutes maybe less…I have a hungry family:)
Ingredients:
1 lb. Ground Chicken
1/2 cup chopped tomatoes
1/2 cup black beans
25 non-GMO organic corn chips
1/4 cup black olives
1/2 avocado
1 cup of medium salsa
Taco Seasoning:
2 tbsp. ground cumin
1 tsp. paprika
1/2 tsp. cayenne pepper
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. black pepper
1/4 tsp. chili powder
Directions:
Brown the chicken.
Warm the tomatoes and black beans in another pan.
Add seasoning and olives, when the chicken is cooked.
Stir the avocado and salsa together till smooth in texture.
Layer the chips on the plate first, then layer the avocado salsa on top of the chips.
Then add the meat ingredients.
Layer the spinach next, then add the tomatoes and black beans.
Serve warm and enjoy!
