One of my to do list this month is finding more ways to get in more veggies and find great recipes to help me fullfill my list. Plus, in doing so I can help my clients get their viggies in too. So I had a craving for something not so great this week so I decided to make these instead, and I could not beleive how AMAZING these were. Okay, okay…they may not be like REAL fries but the are close and they hit my craving for something bad. WIN-WIN in my book!
I’m going to tell you another secret of mine, that I dis-like cooking and baking. So you will notice in this blog that I will have recipes that are very simple, and that have minimal ingredients and time. I have tried this recipe twice already this week to perfect it, and I notice if you bake it it won’t get as crispy, so you have to broil it.
a high temp in the oven for about 20 minutes can work some serious magic. (Caramelization is always your friend.) Feel free to throw some other veggies in the mix too. Zucchini is my favorite because it takes on seasoning so well – but peppers, sweet potatoes, green beans, etc. can all be transformed in the same way.
Follow these simple steps and you’ll be on your way to making some yummy savory treat that you can feel great about.
1. Preheat oven to 425 F
2. Cut your veg into 8-cm/3-inch sticks, making sure they are even in thickness.
3. Line a baking tray with tin foil paper and a light layer of olive oil or what I did was spray the pan with orgainic spray.
4. SEASON – go with the usual salt&pepper and maybe some: paprika, cumin, cayenne, crushed red peppers, thyme, rosemary, sage – really, whatever takes your fancy and suits your meal. Using premixed Ms. Dash spice blends is a great option too – Italian, Mexican, or garlic and onion.

One thing I also noticed that you don’t need any olive oil on the veggies because they hold on the spices without, but try it if you like!
5. Spread your seasoned veg over your lined tray and roast, tossing halfway through, for about 20 minutes or until golden and slightly browned at the edges.
