Ingredients
1 lb. boneless skinless chicken breasts
juice from 2 limes
1/2 cup of cilantro
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
½ teaspoon chili powder
1/2 cup of low sodium chicken broth
Preparation
1. Add every single ingredient to the crock pot.
2. This could be cooked on low all day, or you could set the crock pot to high and cook for 4-5 hours.
3. Once the chicken is cooked, use a fork to shred it, and stir well.
4. Spoon chicken into soft taco (2 for women, 3 for men) tortillas.
Top with 1 tablespoon cheese, 1 tablespoon Greek yogurt, salsa, and 1/8 cup chopped tomatoes.
