One of my very favorite snacks in the fall and winter is pumpkin protein ice cream! This delicious homemade ice cream tastes just like pumpkin pie and with an extra protein boost, you won’t believe it’s so fun of good ingredients! Sweet, creamy, and guilt-free, if you want something indulgent and seasonal, then look no further.
This makes enough for 1 hungry ice cream loving person.
Ingredients
1 scoop vanilla protein powder
2 tbsp. PB2
1/2 banana
1/4 cup pumpkin puree
1 1/2 cup unsweetened almond milk
10 ice cubes (more or less depending on the texture you want for your ice cream)
1-2 packets of stevia (your choice)
Optional: 2 tbsp. No sugar added chocolate chips ( I used Lily's brand mini chocolate chips)
Preparation
1. Blend all together in a blender (except chocolate chips), until smooth.
2. Top with no sugar added chocolate chips (Lily’s brand or your choice)
