Eating your mom’s banana bread every once is fine, but eating it on a regular basis?? Probably not a good idea since it is mostly made from sugar and fat. Even though there is a fruit in there it is not a balanced snack. So instead, I took out some of the sugar (Obviously, there is some sugar from the banana), and then I added some protein and some healthy fat. One serving of this–is cutting half the calories, fat and sugar–to make this a protein packed snack! Can I get a HALLA! Serves 9.
Ingredients
½ cup unsweetened coconut milk or almond milk
1/2 cup of vanilla protein powder
2 ripe bananas
1/2 cup of liquid egg whites
3 tbsp almond flour
1 tbsp vanilla extract
1/8 cup stevia
1 tablespoon peanut chunky butter
1/2 tsp baking powder
5 drops of vanilla liquid stevia
non-stick spray (I use an organic coconut spray)
Preparation
Blend all ingredients together ( I used a blender to make sure it was very smooth).
Pour the batter in a non-stick bread muffin mold or a 9X9 pan.
Bake at 340 degrees for about 45 minutes or until inserted knife comes out clean.
