Chia Seed Pistachio Pudding

I was challenged by one of my Determinite members on creating a recipe like a certain brand “pistachio pudding.” Since this brand has many unknown ingredients I took the challenge and got to work in the kitchen. I have to admit it looks weird but it tastes the same but WAY but even better with all natural ingredients. Serves 2 for a snack or add a fast carb with this recipe and complete your meal. 


1/3 cup chia seeds
1 cup FitPro Protein Or 1 cup of unsweetened almond milk and 1 scoop of vanilla protein powder
1/8 cup peeled pistachios
2 teaspoons pure almond extract
3 packets of Stevia


1. In a blender, blend FitPro Protein Or vanilla protein powder mixture, peeled pistachios, pure almond extract and Stevia together, until the pistachios are fully blended. 
2. Pour the protein mixture in a bowl with the Chia seeds, mix them together.
3. Cover the bowl with a cover, and allow to the chia seed mixture sit for 6-8 hour, preferably overnight.
4. Then when the chia seed mixture is set, use a fork to take out the clumps and then serve.
