These are delicious and easy to make and bake! Makes 5 cakes.
1 lbs. ground turkey
½ cup green pepper
2 chopped up green onions
¼ cup diced green chili peppers
2 tbs. fresh cilantro
2 garlic cloves
3 tablespoon of coconut flour
½ tsp. of sea salt
¼ cup of black pepper
1/2 cup egg whites
Avocado Creamy Sauce:
¼ cup avocado
¾ cup salsa
1 garlic clove
¼ teaspoon sea salt
¼ teaspoon ground pepper
In a large bowl add all ingredients and mix well to combine.
Allow mixture to sit to allow the coconut flour to soak up some of the liquid. Mixture will be wet, but if it is too wet just add a little more coconut flour just until mixture can stick and form little patties.
Next, preheat oven at 350 and spray a muffin pan with a non-stick spray
Add the turkey mixture to each muffin cup.
Bake the turkey cakes at 350 for 20-25 minutes or until done. They should be white in color and golden brown on the outside.
Meanwhile, as the turkey cakes are being created. You will make the creamy avocado sauce.
Creamy Avocado Sauce
Puree all ingredients in blender till smooth.
When the turkey cakes are finished, spread the creamy avocado sauce over the each one.
Optional: Add cilantro for garnish, and pair with your favorite vegetable.
