This simple Sweet Potato and Cauliflower Mash recipe, is a delicious, cozy side dish. Enjoy this sweet treat!
Ingredients
1 large head of cauliflower
2 medium-sized sweet potatoes
2 cloves garlic, pressed
2 Tbs. butter, melted
1/2 cup chicken bone broth
Salt and pepper to taste
Dayna’s Tip: You can use 3 bags of the Sweet Potato and Cauliflower Rice Mix from Green Giant.
Preparation
1. 1. Bake the sweet potatoes at 375 degrees, until tender (or microwave); set aside. If you choose to use the already made frozen Cauliflower and Sweet Potato Mix, steam in microwave and go to, number 4.
2. 2. While the potatoes are cooking, wash and cut the cauliflower into florets. Press the two cloves of garlic. Add the florets and garlic to a pot (small amount of water) and steam until the florets are tender.
Peel the sweet potatoes and add to a food processor or blender (or for a chunkier texture, use a hand mixer).
3. 3. Once the cauliflower is tender, add it to the food processor and blend until it makes a mash potato consistency.
4. 4. Add the butter to the veggies in a pot and slowly add the chicken bone broth a little at a time, until the mixture takes on a creamy mashed potato consistency. If you want it smoother, add more liquid.
5. 5. Season with salt and pepper to taste.
