I was craving french toast this morning, but we don’t even have bread in the house…ever. Gluten free bread is pretty disgusting. I feel I’m a muffin queen, making every dish in little serving sizes is my flair. So why not make these into muffins too! Makes 10 muffins.
Ingredients
Muffin:
4 scoop vanilla protein powder
1/2 oats
1/4 unsweetened almond milk
1/2 tsp. vanilla extract
1 tsp. baking soda
2 tsp. cinnamon
1 cup stevia (granuals)
Top of each muffin:
Mix cinnamon (1 tbsp), Stevia (1 tbsp.), together and let sit till you're almost ready to put into the oven.
Preparation
Preheat oven at 350.
Add egg whites, almond milk, and vanilla in a bowl and mix it well.
Add protein powder, baking soda, xanthan gum and Stevia into another bowl and mix.
Mix the wet and dry ingredients together and pour into a non-stick muffin pan. If it is too thick after stirring, add a teaspoon of egg whites at a time---stir until a smooth creamy appearance.
Sprinkle a little cinnamon and Stevia mix on each muffin.
Bake for 20 minutes at 350.
Cool and Enjoy!
