It was mommy daughter date last night and one of my daughters favorite things to do at this present moment is to watch and help me cook. This recipes was something I new my daughter would love, and super happy she did (so tough feeding a toddler)! This recipe is a large one, so Adrianna will be eating left-overs for awhile!
1 package of spiral noodles (I used Glutino Spiral Noodles)
1-14 ounce jar of pizza sauce (low sugar)
8 ounce can of organic tomato sauce
1 cup of spinach (shredded)
1 cup broccoli (chopped)
1 lbs. extra-lean ground turkey
1/2 cup mozzarella shredded cheese (I used Rice shredded mozzarella cheese)
Optional: black olives, basil, garlic cloves, red peppers
Brown the extra lean ground turkey, and set aside.
Boil noodles till noodles are soft.
Strain the noodles, and put back the stove in a kettle on warm.
Add in the tomato sauce and olives to the noodles--then stir.
Chop the broccoli (stem removed) and spinach in a blender--till finely chopped pieces.
Add in the broccoli, spinach, ground turkey and pizza sauce--then stir.
Lastly, add in the cheese and stir. Allow the cheese to melt, when melted your meal is ready! Enjoy.
Serves 5-6 people
