Lemon Chia Seed Muffins

I love anything with lemon, and this one tops the list! It is packed with protein and a sweet-tart taste that you will love!


1/4 cup coconut flour
1/2 cup unsweetened applesauce
2 scoop vanilla protein powder
1 teaspoon of baking powder
1/2 teaspoon of xanthan gum
1/4 teaspoon salt
4 tbsp. freshly squeezed lemon juice (about 2 medium lemons) 
1 egg
1 Tbs. chia seeds
1/4 cup stevia
1 teaspoon vanilla extract
Optional: All protein powders will be different, so the mixture may be more dryer than it should be. If mixture is too dry, add water (slowly) till you get the right consistency.


Preheat oven at 350.Mix all wet and dry ingredients separately.
Next, blend all wet and dry ingredients together and pour into a 12 cup non-stick muffin pan.
Bake at 350 for 20 minutes.
Let cool and enjoy!
Make 12 muffins or 12-15 cookies.
