Low carb hot cereal, heck yes! I love hot cereal for breakfast and since living in Minnesota and currently our house is now in an igloo with all the snow we are getting. I need warm food! This is a great alternative for oatmeal, cream of wheat, or cream of rice. I’m allergic to gluten-free oats and everything gluten so this is a great choice for me. It does have a different texture so beware of that but with the nutritional value in this meal I will certainly still be eating this. This serves 1, enjoy!
Ingredients
3 Tablespoons flax seed meal (dark or golden)
1 Tablespoon almond meal
½ scoop protein powder
2/3 cup boiling water
Dash of sea salt
1 teaspoon or packet of stevia
5 drops of liquid vanilla stevia
Dash of cinnamon
Dash of unsweetened almond milk
Toppings (optional): Berries, crushed walnuts, slivered almonds, melted almond butter.
Preparation
Place flaxseed meal, almond meal, your favorite flavor protein powder, sea salt, stevia, and cinnamon in a glass bowl.
Add ½ cup of boiling water and stir in ingredients, well.
If too thick, add slowly 1 tbsp. more boiling water. If too thin, add a little more flaxseed meal (1 teaspoon).
Add unsweetened almond milk to taste.
Makes a great tasting replacement for oatmeal or cream of wheat!
