Overnight Chocolate Peanut Butter Oats


This is another one of those dishes that my hubby just loves to eat! He would want to eat nothing but that for breakfast. The whole time he was eating, he couldn’t help but think this is way too good, there is no way it can be healthy. How can this be? Healthy food CANNOT be this good…Well, apparently, it can!

Ingredients

1/3 cup oats
1/3 cup Greek yogurt
1/3 cup unsweetened almond milk
1 1/2 tablespoons pumpkin
1 tablespoon unsweetened cocoa
1/8 cup PB2
1-2 packets of Truvia or Stevia (I used 2 packets)
Topping: 1 tablespoon or either: Enjoy (dairy free) mini chocolate chips, nuts or dark chocolate chips

Preparation

Mix PB2, pumpkin puree and unsweetened cocoa powder in a bowl until blended together.
Stir in oats, yogurt, and milk.
Cover, and refrigerate overnight.
In the morning, top with either chocolated chips, nuts or keep as is!
Eat cold and Enjoy!
